Breakfast Quinoa
If you're like me you have probably made some unnecessary Costco purchases. I bought a huge bag of quinoa and needed to find a way to use it up. So I came up with this Breakfast Quinoa recipe. Give it a try for a tasty, nourishing way to start the day!
Ingredients:
- 1 cup Quinoa
- 1.5 cups Water
- 2 tsp Cinnamon
- 2 tsp Vanilla
- 3 tbsp Hemp Hearts (optional)
- 3 tbsp Flax Seeds (optional)
- 1 tbsp Pumpkin Seeds (optional)
- Milk/Dairy Alternative
Add quinoa, water, cinnamon and vanilla to a medium saucepan. Cook as per product directions (approx. 15 mins on medium heat - bring to simmer and cook until no water remains, stirring occasionally). Place cooked quinoa into a storage container. Sprinkle hemp hearts, flax seeds and, pumpkin seeds on top and refrigerate. When ready to enjoy scoop serving into bowl and top with milk/dairy alternative. Microwave for 1-2mins.
Yield: 5-6 servings
Keep refrigerated for up to 1 week.
